Easy cupboard meals you can make at home

Many of us are staying home and practicing safe social distancing but that means no weekend brunches, mummy meet ups or after work nibbles. Although some restaurants are offering delivery, this isn't something we can be doing every single day. Of course, cooking every meal comes with it's own set of challenges.
Here are some from-the-pantry meals our team have been cooking at home, and a few more dishes we want to try this week.


Who? Kat, Marketing Manager

The dish: Chickpea stew

Pantry essentials you'll need: Canned chickpeas, tinned tomato, dried spices (oregano, parsley, paprika), garlic cloves and an onion

Do you use a specific recipe? Not really, I learnt it from my housemate at uni, I fry the chickpeas in the spices first to get them nicely coated then add everything into the pan and leave it on a simmer for 30 minutes.

What could you add to it? I'll often add whatever cooked meat or veg I have lying around for 10 minutes at the end, especially good with sausages!

The dish: Tuna pasta bake

Pantry essentials you'll need: Pasta, pasta sauce, tinned tuna, tinned sweetcorn, chopped tomatoes, cheese and parsley, if you like

What could you add to it? Can swap the tuna for chicken or veg for a meat free option

The dish: Kidney bean curry

Pantry essentials you'll need: Tinned kidney beans, tinned chopped tomato, dried spices ( turmeric, coriander, red chilli powder, garam masala, salt), Green Chillies, Ginger, Garlic

Do you use a specific recipe? My mums recipe. Soften the onions in oil, add green chilli, ginger and garlic and fry for a minute. Add chopped tomatoes and the dry spices. Let the sauce cook for 15 minutes, then add the kidney beans and some hot water, and simmer for 20 minutes.

What could you add to it? Could add coconut milk instead of water to make it creamy. Always eat with rice!

We love the sound of this tomato soup with a twist from Jamie Oliver's website. He described it as “This Italian store-cupboard meal is a wonderful way to make a loaf of stale bread stretch further. It’s also brilliantly quick to put together – enjoy!"

What you'll need...
4 cloves of garlic, olive oil, 1 bunch of fresh basil (30g), 2 x 400 g tins of plum tomatoes, 270 g stale ciabatta, 40 g Parmesan cheese, extra virgin olive oil



Now, bear with us on this recipe, we promise it's amazing, easy to make and perfect for the little ones (and big kids too!). Even Nigella says "Anna Del Conte introduces it as hardly a recipe, but I wanted to include it because I haven't as yet found a child who doesn't like it."

What you'll need...
375 grams spaghetti, 50 grams unsalted butter, 1 teaspoon marmite (or more to taste), freshly grated parmesan cheese (to serve)





If you get your hands on some eggs the perfect way to enjoy then is in an omelette, Good Housekeeping have a great recipe for " A cross between a Spanish omelette and a frittata, and all the better for the mix!" Delicious.

What you'll need...
15g Butter, 1 onion finely sliced, 500g waxy potatoes such as Charlotte, 125g chorizo ring skinned and sliced into 3mm (1/8in) rounds, 10 medium eggs, then if you'd like 50g pitted green olives sliced, 75g cheese (Manchego suggested), cut into 5mm (1/4in) pieces
